Since pancake Tuesday is tomorrow I thought I would share with you this very simple but delicious recipe for crêpes!
Pinch of Salt
How to make batter:
Sieve the flour and salt. Make a well in the centre of the flour and drop the egg into it. Add 1 tablespoon of the liquid and mix.
Add half the liquid very gradually so as there are no lumps in batter.
Beat for about four minutes, until the surface of the batter is covered with little bubbles.
Mix in the rest of the liquid, cover the bowl and leave to stand for about an hour.
Heat the frying pan with a little butter. When the pan is hot, give the batter a stir before pouring a thin layer onto the pan.
Fry until golden brown. Toss the pancake onto the other side and fry until golden brown.
Dust with sugar, add a drizzle of lemon juice and a little butter.
Try adding raspberries or blueberries!
Other Filling Suggestions:
Banoffee style: Top with banana, cream and caramel sauce
Crêpe Suzette: Add Cointreau, grated zest of ½ an Orange.
Lemon cheese: Mascarpone and lemon!
Strawberry, almond and caramel pancakes.
