Since Valentine’s day is only around the corner I thought I would share with you my favourite recipe for Red Velvet Cupcakes!
Cupcakes: Icing sugar:
150g Unsalted butter, softened 500g Icing sugar
2 large Eggs 125g unsalted butter, softened
200g Caster sugar 125g cream cheese
2 tsp Vanilla Extract
2 tbsp Cocoa powder
1 teaspoon White Vinegar
½ tsp Baking Soda
250g Plain flour
For the cupcakes
Preheat the oven to 170c, 325F, gas mark 3.
Beat the eggs and sugar together until light and fluffy. Add the eggs and mix until everything is fully incorporated.
Place the cocoa, food colouring and vanilla extract into a measuring jug. Mix until smooth. Add this into you butter and sugar mix. Then mix the two together until you have a red cake batter. (Don’t worry if it looks pink, as this will darken).
Measure out your buttermilk in a measuring jug. Pour half into you cake mixture and beat until mixed. Add half of the flour and mix again. Add the rest of the buttermilk and flour. Keep mixing until everything is smooth, glossy and velvety.
Add the baking soda and the vinegar and beat for another thirty seconds. The mixture should be smooth at this stage.
Divide the mixture into the cases and bake for 20-25 minutes. Let them cool in the tray for a bit and then transfer them onto a wire rack to cool further.
For the icing
Put the icing sugar and butter into a bowl and mix well. Add the cream cheese and beat until it is lovely and fluffy.
Add the icing into a piping bag and pipe onto the top of the cupcakes. Decorate as desired.
